If you really want to go that route, you should also look at AstLinux and install it on an HP thin client such as a 5720. No Hard Drive spinning, and something like 30 watts. No fan either. All the asterisk files can be edited either through SSH or a web interface.
I have a bunch out working for a private VOIP network of telephone collectors. Many also integrate PSTN lines through various means
5720's can be had on eBay for a LOT less money
