Aha.  The Asterisk packages themselves are in:
http://packages.asterisk.org/centos/5/current/

Sorry, I knew we did create packages; I just hadn't taken the time before
today to actually go locate them.

To address your question, I believe you need to do 'yum update', or you will
be using the prior cached copy of the package site.
