The only time we have used Cisco routers as Gateways is at remote locations
from the PBX such as setting up a virtual PBX. This way the company can
still have a few local CO trunks for things such as E911. Example below

                                                           | Remote Company
 Asterisk ----- PIX ---------- Internet --------| --------- 10 IP Phones
connected to * for PBX functions and Toll Bypass
                                                          | ---------- Cisco
1751 with Local Lines VPNed back to PIX For E911/inbound local and some
outbound local

Is there any reason not to use the * server as the gateway?

I have used 1751's with good success. They support up to 6 fxo's the 1760
will do up to 8 fxo's.
