That is due to the digital nature of cell phones. The codecs on
cellular networks are optimized for voice only, and do not work well
for anything else. They look for certain frequencies and vocal ranges,
and cut out the rest, which makes voice sound fine, but music not so
hot.

Just about the only thing you can do is try to find some simpler music
that sounds better over a cell phone. I've found that some classical
music sounds ok.
