Your Asterisk server is behind NAT right?  Maybe it's your Firewall causing
the problems.  There are alot of different NAT implementations out there.
Possibly look at timeout settings on your firewall, or a different vendor
firewall.

Some NAT implementations maintain a list of all NATed connections, if this
list get's too big, or is somehow reset, then those connections might
actually get reset, not just drop packets.

Hmmm.. that more or less blows out my theory then and puts me back to
square one.. :(

What codec are you using?
Have you got any jitter buffer setting enabled and if so what are they?
Have you done anything to the standard IAX settings?
