heh, so...the majority of the headers are automatically built from sorcery (see the "ast_sip_sorcery_object_to_ami" function in pjsip_configuration.c) and these reflect the name/text from the config file(s).  I set these manually entered ones like this so they would be similar to the rest.  If this is an absolute requirement then I will have to go back and type up all those objects/fields manually :-(  Just let me know for sure.
