I'm not going to argue for either DocBook or Tex. :)

btw the German book on Asterisk "Das Asterisk Buch"
http://www.das-asterisk-buch.de/ (GNU/FDL) is in DocBook format.
You might want to have a look at http://www.the-asterisk-book.com/
(translation to English, alpha version).
