Do I understand this right:

I Asterisk version 1.4, it will be possible to see that a call is on
hold, for instance in AMI ?

> Phones do this themselves. In SVN trunk, it's possible in the SIP channel to actually pass through the hold/unhold signaling to the SIP endpoints (rather than handling it in Asterisk), which should result in the behavior you are looking for. This will be part of the Asterisk 1.4 release.
