IAX does transfer the call to a peer-to-peer call after call setup.
So IAXtel works as a peer-to-peer fabric. If you call me over IAXtel,
the media stream will go from your server to mine, providing your
server isn't behind nat.

IAX2 is surprisingly clever. Test it.
