I'm curious...why would a GbE phone interfere with a GbE POE switch? Or
would it only interfere with a 10/100 POE switch?

Cisco has several GiG-E phones, including the CP-7941G, CP-7961G and
CP-7971G which I think all come in Gigabit (The use the nomenclature "GE" in
the part number).  They are not inexpensive.
