Option #2 is really the best option unless you need "real time" viewing of
your help information (IMO).

No.

But you can either:

1. Use a terminal that has a long enough scroll-back buffer (or screen
inside one that doesn't)

2. Run from the external shell prompt: 

  asterisk -rx 'help <whatever>' | less
