To answer my own question :)

Yes, it can be done by way of using polycoms magic config files:

On phone1.cfg for all phones or MAC ADDRESS.cfg for a specific phone:

call.autoOffHook.x.enabled="1"
And
call.autoOffHook.x.contact="EXTENSION TO CALL"
