You will get many opinions on this one.

They are both rock solid.  Choose a path and stick with it for all of 
your servers.  We started with CentOS but moved to Sarge when it 
became stable.  We have been running several Sarge * servers for 6 to 
9 months without any problems.

We spent the last 7 years running our ISP on RedHat.  Started looking 
at other distros when the RH policy changed.  Tried a bunch.  I 
really like the Debian distro and the strategy behind it.  I like the 
boot speed.  I like the simple elegance of apt.  We are now in the 
process of moving all our RH9 machines to Sarge.

I don't like the fact that CentOS is nothing more than a copy of RH 
Enterprise Server.  It is almost like running a Windows clone.  I 
would rather find and run something better.
