FXO ports are for physically plugging in analog POTS phone lines.
FXS ports are for connecting analog devices like phones or fax machines.

The number of FXO ports you need is dictated by the number of analog phone
lines you want to integrate with your Asterisk PBX. The number of FXS ports
is dictated by the number of analog phones or fax machines you want to
connect to your Asterisk PBX.
I would suggest spending some time studying the Asterisk WIKI at
www.voip-info.org Everything you need to know is there, and more.
The X100P (clone) and the, albeit more expensive, Digium version, are
basically winmodem, like the type many computer users have in their PC's for
"dialup" internet access. If you are more of a hobbyist, and are operating
on a shoestring budget, than buy an X100P clone and give it a go.
If you are serious about building an Asterisk system to service your
business, or even for primary residential use, I would strongly encourage
you to obtain the Digium version.
The clone X100P cards are not reliable, and many users have problem with
echo using the clone cards. Spend a little more and buy the Digium version.
Not only will you be much more likely to have a positive experience with
your Asterisk deployment, but you will also be supporting a company who is
constantly working to improve the software that has enabled literally
thousands of entrepreneurs around the world to create viable business for
themselves.
