The 7940/7960 series phones, the option is under SIP Configuration, 
Messages URI. I enter the voice mail extension here.

Make sure you have an entry in your sip.conf. My phones come in from the 
context from-sip, so in my sip.conf I have:

mailbox = extension at from-sip

In my case, extension 3501 would look like:

mailbox = 3501 at from-sip
