The one that you're most comfortable on.
I'd venture to say http://www.redhat.com/software/rhel/ Redhat
Enterprise Linux.. They offer support to back their software up, but
it's not cheap.
Centos is built on the RHEL RPMs so it's similar but with no support.
Debian/Suse/Fedora are all pretty good for stability too.
