Stability is not as much of an issue for Linux machines as it is for Windows. I'm not a Linux expert, but its my understanding that stability is determined by the Kernel, which most distributions share.
What is more an issue is which distributions support which programs (and how easy it is to get updates). While there are many similiarities, the architecture among different Linux versions is not exactly the same. As a result it might be difficult to get an application designed for one distribution to run on another distribution, even if they run the same kernel. As a result its usually a good idea to go with a common distribution which has the most programs specificially designed for its architecture, and supports easy updates (since these fix security issues). Red Hat/Fedora is the largest, and one of the most used in business applications. Since Red Hat has started charging for their Enterprise products, there have been another of "Clones", that use the free RedHat open source, but have gotten rid of the RedHat Logos. Examples are CentOS, WhiteBoxLinux and TaoLinux. Depending on whether you need support or not, you could go with Red Hat, or one of the clones.
