I'll probably be using this.
Do you know if leaving out the setting will allow the *PBX to respond on
multiple ports? We use 5060 and 5061 for example.

No. It doesn't. I think people have been creative enough to have done this
in the past though by mapping multiple ports to the one that is bound with
iptables or the like.
