Any reason you need to run asterisk in a console?

asterisk -r allows you to view the current console.
/var/log/asterisk/messages gives you the full history: grep it, tail -f,
or whatever.

If it doesn't: configure /etc/asterisk/logger.conf to log what you want
to whereever you want.
