Alex,
When I had the same conferencing problem, Snom told me that the 200 doesn't have enough horsepower to do conferencing with codecs other than g711uLaw. Take out your GSM or g729 in each Snom200 sip.conf context and you will be able to see the "Cnf.On" show up.
