Keep reading the instructions.  You simply must invest some time here. 
On the page it says:

The firmware files also contain some default configuration files that 
you can use as a base of configuring your phones. "

Ah ha!  There's the files you want!

I used proftpd for my ftp server.  It was pretty easy.  I don't know 
about your uppercase problem.  But you can change the user name and 
password on your phone.  On the page (read it please) it says,

"To get into the Admin interface on the hardphone the password is '456'"

I think you can change your user name to whatever you want there.

You can use vi to edit the xml files.  Just be careful.  I screwed mine 
up with pico and it took me forever to figure out where my mistake was.

And the docs aren't lacking.  It's just that the Polycom folks made them 
very hard to find.  They want phone jockeys to work on these things and 
not hackers like us.  The manual they have is very extensive and you can 
download it at either their web site or the same site referenced above.
