All virtualization technologies (Vmware, Xen, User Mode Linux, Colinux 
etc.. ) will inherently have problems w/ timing granularity that will lead 
to clicks, pops and drops in the audio streams. These will become unusable 
during heavy disk access. The problem is that the consistent, microsecond 
timing required to keep a steady stream of RTP or IAX packets going during 
other activity just aren't fine grained enough to make things run 
smoothly.

You can do it, but I wouldn't reccomend it for production purposes. I do a 
lot of testing w/ Asterisk under Vmware, but I wouldn't use it for 
production reasons.
