Am I wrong to understand that IAX only needs one port, TCP4569 by
default? So I only need one port for each phone, while SIP requires at
least 3 (SIP, and one RTP each way)?

That's UDP 4569.
Also, depending on your configuration, you may not need to do any port forwarding
at the 'client' end. Just have all your phones send registrations frequently
and your natting router will do the rest.
