Thanks.  That's an ok solution.  I just thought I could make the Polycom
ring normally (or even better, with decreased volume) when a new call comes
in.

You will get a call waiting beep. One. However you can change the config
file and have multiple beeps. You can also change the beep 'sound'. However
you must also be aware that while the phone is playing the beep(s), you are
not hearing the far end of the call.
