My experience has been that this change will update the from address of
the email notify, but the "pager" notify will still come from the user
running asterisk. Unless there has been a change since 8/2005.

Open voicemail.conf
Find serveremail=asterisk
If it's commented, uncomment it
Change it to the email address you want it to be.
