Please note that app_conference has certain benefits but also certain
drawbacks.  

app_coinference transcodes once (if needed) for each destination type.
If you have for example 3 g.729 listeners and 1 g.711 speaker
app_conference will transcode once for all 3 of the listeners.
app_meetme transcodes 3 times (or at least used to according to the
app_conference stuff).  This saves cpu.

app_conference will *not* listen for any dtmf during a conference.  This
means no admin menu, no users muting/unmuting themselves, etc.

There are a couple other differences, but those are the major ones.
