Follow these steps:

/etc/asterisk/zapata.conf
faxdetect=incoming

/etc/asterisk/extensions.conf
exten => s,1,Wait,1 

Then:

here, I made these changes:

/usr/bin/metasend -b -F "$SENDER" -t "$RECIPIENT" \
  -s "Fax de $FAXSENDER" \
  -S 100000000 \
  -m 'text/plain' -f "${TMPFILE}" -n \
  -m 'application/pdf;name="fax'${FAXID}'.pdf"' -f "${TMPFILE_A}" \
  -D 'PDF Fax Document'

(because, if the *.pdf file is too large, the metasend begin to split
it.)
