Show channels is only going to show you what channels are actually in use,
not what is configured. Try 'zap show channels'. If that indicates zap/1
exists, then your issues are likely in the extensions.conf area.

Post the results of:
 zap show channels
 relavent part of zapata.conf
 relavent part of extensions.conf for both incoming and outgoing calls
