Hello Douglas,

I don't know if this is exactly what you need, but the "fromdomain" and 
"fromuser" in sip.conf (explained here: 
http://www.voip-info.org/wiki-Asterisk+config+sip.conf) change the From: 
header to fromuser_value at fromdomain_value.
