I use su - root -c "screen -dm asterisk -vvvgc"

that works from init.d, puts the screen somewhere root can get at it if need 
be, and you can always use asterisk -rx "shutdown now" to stop it in an 
init.d script.

Naturally I use full paths too.  :-)
