Answering my own question:
Yes, asterisk current stable supports codec prefs, it only doesn't show 
any sane stuff with sip show peers or sip show channels.

But then, does, or will realtime support
  - Inheriting the codec prefs from global and give sane output on 
(sip|iax|whatever) show (peers|channels)?
  - Custom codec prefs per client?

or does anyone know when, for those of these prefs that aren't 
implemented?
