No, but many mail servers check that the email address you use is
"valid". Valid has several meanings, but probably means that the
_sending_ address you use should be "deliverable" and is in a real
domain.  If you use Asterisk _entirely_ in your company this may not
be necessary, but otherwise you are going to cause yourself real
trouble if you don't use a "real address".

Perhaps this should be stated more clearly in the voicemail.conf?

"sendmail" (the sendmail MTA) isn't required to send email. What is
required is a sendmail compatible binary at /usr/sbin/sendmail.

Writing a mail server is not as easy as you might think. Better leave
to a program dedicated to this task, though it doesn't have to
specifically be sendmail (inspite of the binary's name).
