To add to what Erin said, Asterisk-GUI was first used commercially by Digium in their (now EOL'd) AA50 product. While not everything matches up exactly (probably because I suspect the AA50 firmware was based on Asterisk-GUI versions pre-2.0), for the most part the very comprehensive manual that Digium wrote for the AA50 (http://docs.digium.com/AA50/AA50_user_manual.pdf) applies to Asterisk-GUI, so you might want to keep the AA50 manual handy as a reference.

I do not know of any usage or configuration tutorial that describes how to use Asterisk GUI. Asterisk GUI is meant to be a tool for people already familiar with Asterisk. If you are familiar with fundamental Asterisk concepts, you should be able to browse the different sections of Asterisk GUI ("Incoming Rules", et. al.) and see how to do certain things. For instance, if you try to create an incoming call rule with Asterisk GUI before you create any SIP users, Asterisk GUI will direct you to create SIP users first. If you are looking for a specific Asterisk configuration option, you can grep the files that make up Asterisk GUI to see where certain configuration options are located.
