I am not sure this is the correct list, maybe the users-list is best suited?
This is what I would check, though:1 - make sure the field is properly created - the field could be a char(3) with lets say default 'no'
 - set it to yes for the testing peer
2 - make sure it is being loaded by chan_sip - sip reload or prune and show load that peer - then sip show that peer to verify changes

Once that has been checked, it is no longer a realtime sip configuration issue, and you need to start by making sure res_srtp is installed, and that the endpoint is configured to use srtp.

Again, I believe this belongs to the users-list
