Let me clarify. I want incoming media data (RTP audio stream) not to go to asterisk, but to another device on local LAN. I'll set up a NAT in Linux kernel that will transfer the incoming stream to my DSP device. For that to work I should specify IP address and UDP port where remote peer should send data to.

No at all. It is required only to implement a few callback functions which will provide you incoming media data.
