asterisk -rx "sip debug"
asterisk -r | grep a20 headers

I'm not saying that this would be an unnessisary feature in fact it would be
cool but there's more than 1 way to skin a cat.

but if you are looking at sip debug lines to debug sip headers, then  
your suggested command won't show you all the sip headers.
