Sorry if was confusing - Essentially I would like to point the African IAX2
to a server in the USA and the Australian IAX2 to a server in Australia in
the interests of minimizing latency.

Hello Craig,

As far as i know, in IAX2 protocol you cant seperate media with 
signalling, so what sort of Media Servers you are pointing towards ?
